Equipment

  • 1 Mixing bowls
  • 1 Muffin tin
  • 1 Paper liners or cooking spray
  • 1 Whisk or electric mixer
  • 1 Measuring cups and spoons
  • 1 Wooden spoon or spatula

Ingredients

* 2 ripe bananas, mashed

* 1/4 cup honey or maple syrup

* 1/4 cup unsweetened applesauce

* 1/4 cup almond milk (or any milk of your choice)

* 1 teaspoon vanilla extract

* 1 1/2 cups whole wheat flour

* 1/2 teaspoon baking soda

* 1/2 teaspoon baking powder

* 1/4 teaspoon salt

* 1 cup fresh blueberries

Instructions

1. Preheat your oven to 350°F (175°C) and prepare your muffin tin with liners or a light coating of cooking spray.

    2. Using a fork, mash the ripe bananas in a bowl until they become smooth.

      3. Add the eggs, Greek yogurt, honey, and vanilla extract to the mashed bananas, whisking until well combined.

        4. Mix the whole wheat flour, baking powder, cinnamon, and salt in a separate bowl.

          5. Gradually incorporate the dry ingredients into the wet mixture, stirring until just combined.

            6. Gently fold in the fresh blueberries.

              7. Fill each muffin cup about two-thirds full using a muffin scoop or spoon.

                8. Bake the muffins for 18-20 minutes or until a toothpick inserted into them comes out clean.

                  9. Let the muffins cool in the tin for 5 minutes before moving them onto a wire rack to cool down entirely.
