  • 500 grams mutton cut into pieces
  • 2 cups basmati rice
  • 1 large onion thinly sliced
  • 4 cloves of garlic minced
  • 1- inch piece of ginger grated
  • 4 green chilies slit
  • 1 cup plain yogurt
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala powder
  • 1 teaspoon biryani masala powder
  • A handful of mint leaves chopped
  • A handful of coriander leaves chopped
  • 4 tablespoons ghee or clarified butter
  • 1 tablespoon vegetable oil
  • Salt to taste
  • Water as needed


  • Step 1: Wash the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  • Step 2: In a large pan, heat 2 tablespoons of ghee or clarified butter and 1 tablespoon of vegetable oil over medium heat. Add the sliced onions and sauté until golden brown. Remove half of the onions from the pan and set them aside for garnishing.
  • Step 3: In the same pan, add the minced garlic, grated ginger, and slit green chilies. Sauté for a minute until fragrant.
  • Step 4: Add the mutton pieces to the pan and cook until they are browned on all sides. Stir in the turmeric powder, red chili powder, garam masala powder, and biryani masala powder. Mix well to coat the mutton evenly with the spices.
  • Step 5: Reduce the heat to low and add the plain yogurt to the pan. Stir well to combine with the spices and coat the mutton. Cover the pan and simmer for 45 minutes to an hour, or until the mutton is tender and cooked through.
